Pâtissiery Heaven With Sébastien Gyre at Siam City HotelThose of you who like pastries - and who doesn't! - will rejoice that the Siam City Hotel, Bangkok, has newly welcomed the arrival of pastry chef extraordinaire, Sébastien Gyre. He is now cooking up on a daily basis delectable treats for our hotel's numerous dining outlets - Patummat, Bakery Café, City Lounge and Primavera - along with supplying our in-house weddings, banquets, parties and functions.

Chef Gyre began his culinary career at an early age, growing up in the kitchens of La Rochelle alongside his boulanger grandfather and pâtissier father. It was here, in his home town that he undertook his formal studies, gaining a Professional Aptitude Certificate (CAP) as a pâtissier (pastry chef).

Upon graduation, chef Gyre honed his expertise with Club Med and Club Aquarius, working in not only France, but around the globe in Greece, Morocco, Tunisia, Quebec, Australia and the U.S. He then furthered the art of French cuisine in various traditional-style restaurants and cafés, such as Le Croustillant in Lille and his own catering business in New Caledonia. Recently he even stepped into the classroom at Silpakorn University in Bangkok, teaching hotel management students the finer points of French pastry and baking.

Luckily for us, he's returned to the kitchen and is now tantalising guests, locals and staff alike with his divine creations. Whether it's an éclair, baguette, mille-feuille, croissant, macaron, petit fours, ice cream or elaborate croquembouche, his culinary masterpieces never fails to look good and taste even better! As Gyre likes to say, with his food he has one goal: "To make people happy". For him it's not about being the fanciest or the most colourful, it's about being an artisan; using good ingredients and the right technique, to produce food that's "simple, but well done". Who could argue with that!

Why not try some of Gyre's work any time of day at the hotel's Bakery Café or try sampling as much as you like at Patummat Restaurant, during our breakfast, lunch and dinner buffet.
